A smoked baked potato is something you probably never considered. But once you eat one, you will never cook a potato in your oven again. These are great along side a grilled steak, smoked brisket, or grilled chicken.
Which potato is right for this recipe?
There are dozens of different potatoes, so which is best for a perfectly baked potato? My go to is a plain ole russet potato. These have a great white fluffy texture and thick skin that crisps up perfectly. Yukon golds will also work but they have a thinner skin and are smaller than russet potatoes. Red potatoes and fingerlings are way to small and become too soft when cooked down.
Ingredients for pellet grill baked potatoes:
Large russet potatoes
Olive Oil
Coarse salt, Maldon Salt is my favorite, but Kosher salt or sea salt
Sour cream
Butter
How to make pellet grill baked potatoes.
Start by washing the potatoes under running water.
Use a paper towel to blot the potatoes dry then put them on a baking sheet.

Drizzle with olive oil on the potatoes and completely coat them..
Sprinkle plenty of salt over the potatoes. Don’t be stingy! The salt crust is delicious, trust me.

Preheat your pellet grill temperature to 450 degrees F. Cooking temperature will provide plenty of smoke flavor but you will have a perfectly baked potatoes in under an hour. OR if you are smoking some meat low and slow at 250-275, you can cook these along side bu expect a cook time of 2-3 hours.
Place the potatoes on your grill grates and close the lid. Cook for 30-60 minutes until fork tender.

Once cooked, remove smoked potatoes from the grill and serve immediately. Add your favorite toppings like butter, sour cream, green onions, or shredded cheese.
